The Kai Shun Tim Mälzer nakiri knife is designed by top chef Tim Mälzer. These knives are made with Kai's famous damasque-layered metal, combined with a very hard core of VG-MAX steel. The core of the blade is rust-resistant on the outside with 32 layers of damasque steel. The hardness of these knives is 61 ± 1 HRC, which is exceptionally hard. As a result they retain their sharpness very long. The handle is made of brown walnut wood and is very comfortable in the hand for both lefties and righties.
