Santoku in the Signature Series by Robert Welch.  
   


The Signature Series by Robert Welch was developed in 2005. Intensive consultations with professional cooks led to a design with ergonomically optimal design in which the balance is optimized per individual knife. Any type of knife has been completely redesigned. This means all handles are tuned to the knife to which it is attached. The handles are made from durable melamine that is cast around the full tang blade. The steel in the handle features holes to make the melamine run through the steel. This makes the handle and blade blend together as one. The handle does not let go. Not even a bit.   
  


They've chosen a medium sized bolster. A large bolster would result in not being able to continue the edge until the end, and a half model would make the steering of the knife more difficult. The bolsters of the Signature-knives are an ideal compromise. The rounded shapes guarantee the ergonomics. The seamless construction is important for hygiene. There is no room for things that you don't want on your knife.  
   


The most important element of the Signature-knives you will notice every day during use. They lie perfectly in your hand and cut great. The confirmation of this quality you see in the prizes that these knives have won. Only an exceptional knife wins a Red Dot design award!

J'ai comparé 6 couteaux santoku.
Lion Sabatier Edonist, Lion Sabatier Idéal, Zwilling Pro, Zwilling Twin Cuisine, Zwilling Quatre étoiles II, et Robert Welch Signature.

Robert Welch Signature - Le moins cher du lot, mais un beau couteau. Il a un bon poids et l'équilibre, et coupe magnifiquement. Et cette poignée lisse est étonnamment confortable. Un couteau vraiment bon!

Robert Welch était le couteau que j'ai choisi de garder.

Eigenlijk opvallend dat er weinig reviews te vinden zijn over deze messen in NL. In met name Engeland is men lyrisch over de messen van Robert Welch. 
Ik heb dit mes nu kleine 2 weken in gebruik en begrijp dat enthousiasme wel. 
Mijn eerdere mes is ook Santoku, dus ik ben er bekend mee. Het feit dat de snede van dit mes iets gekromd is maakt wiegend snijden prima mogelijk. De hoek van het handvat is er prettig, balans is prima. Het is net iets kleiner dan mijn vorige mes en dat was heel even wennen. Nu ik gewend ben vind ik dit juist super prettig, heel handzaam en toch groot genoeg voor grotere producten. Ik heb M/L handen en krijg de indruk dat de vorm van het handvat ook prima kleinere of grotere handen past.
Vlijmscherp geleverd. Nog niet hoeven slijpen, maar ik las dat de standtijd prima is, wel opletten dat de slijphoek kleiner is dan bij gebruikelijke Duitse messen. Gelukkig heeft mijn sharpmaker deze hoek ook aan boord.
Zelf heb ik een beetje ervaring met Eden en Wusthof santokumessen van vrienden en familie. Voor een lagere prijs is dit een mes dat fijner in de hand ligt dan Wusthof en volgens opgave van hetzelfde staal en bewerkingen. De Eden santokus zijn okay, maar vind ik beduidend minder fijn in gebruik dan deze Robert Welch.
Het was een beetje een gok, omdat ik dit mes heb gekocht zonder het geprobeerd te hebben, maar het heeft prima uitgepakt. Een aanrader wat mij betreft.
