The chef's knife is a real all-rounder. You use it when cutting vegetables, meat and fish, but also when, for instance, chopping herbs, crushing pepper corns or peeling a clove of garlic. ## Kai Shun Classic chef's knife

The Kai Shun Classic series consists of beautiful kitchen knives with 32-layer damascus steel. The VG-MAX core provides unsurpassed cutting properties. VG-MAX is a rock-solid type of steel (61HRC) which ensures that you can sharpen the edge razor-sharp. The 32 layers of damascus steel protect this hard but fragile core. The handles are made of laminated pakka wood and have an asymmetrical shape. The knife feels great in hand. The knife is meant for right-handed use, but our left-handed colleagues also put it to the test. They felt the knife was great to work with. 

Because of its look, feel and ultimate cutting properties this knife is an absolute joy to behold and amazing to use.

We measure the sharpening angle ourselves. This value is the angle per side.  So 20º means that the total angle of the edge is 40º. Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
