The Lion Sabatier Idéal Périgord mini santoku 13 cm is a small santoku for cutting up meat, fish, vegetables and herbs. No kitchen knife series is complete without a santoku, the Japanese version of a chef's knife. The dimples in the blade ensure that no ingredients stick to the blade. It is sharp and does look well, but I should have checked depth of blade. I would go for a thicker blade to protect my fingers for fast chopping. But lovely knife if for cheese or occasional use
