The **Skottsberg The Original Cast Iron 532673 'poffertjes' pan 24 cm** is suitable for frying up to 19 poffertjes (small pancakes) at a time. This pan is perfect when you want to make mini-omelets or mini-pancakes. The entire pan is made from cast iron. Cast iron is durable, these pans will last a lifetime. This pan can also be used on heat sources such as gas, wood fires and you can put them in the oven.

## Skottsberg cast-iron pans

Cast-iron pans are some of the most robust pans on the market. The same is true for Skottsberg's cast-iron pans. A characteristic feature of Skottsberg's cast-iron pans is that they do not have a synthetic non-stick coating. The cast-iron pans are pre-seasoned with a natural oil, which creates a patina. This negates the need for a synthetic non-stick coating. It's better for your health! Skottsberg's pans usually are somewhat lighter in weight than most other cast-iron pans. This is because they use a cast iron that can be made lighter. Additionally, the handle is hollow, which has the added benefit of allowing the handle to stay cool. Thanks to the special heat treatment, Skottsberg's cast-iron pans are more resistant to rust and scratches than other cast-iron pans without this heat treatment. Skottsberg's range of cast-iron pans includes frying pans, crêpe pans, woks, grill pans, saute pans and a casserole. 

## How to use Skottsberg cast-iron pans

Cast iron is sustainable and distributes heat excellently. The unique qualities of cast iron make this the perfect pan when preparing products that require extreme heat. Because cast iron retains its heat well over a long period of time, cast iron pans are also perfect for preparing dishes that need to simmer for a long time. The natural non-stick layer is a patina that will improve over time. When the pan heats up, the non-stick coating will give off a delicious scent. After the natural non-stick coating has been well-developed over time, you can roast or fry with relatively little butter or oil. Be careful with acids such as lemon, white wine and tomato. Acids can negatively affect the patina. Steel cookware should be avoided for the same reason. 

## Skottsberg cast-iron pans: maintenance

Only wash this pan with hot water and a brush. Soap is out of the question and a dishwasher will cause irreparable damage to the pan. These pans require special treatment, but when used correctly, they are a pleasure to work with. Periodically put a layer of coarse salt in the pan and heat it for around ninety seconds. The salt will burn odours and suchlike off the patina. Rinse the pan, dry it with kitchen towel and lightly coat it with some oil before storing it. If the natural non-stick coating is damaged, the pan should be seasoned again.
