This **Zwilling Twin 1731 chef's knife** combines the most exceptional materials and a stunning design with perfect cutting properties. The knife was designed by famous Italian designer Matteo Thun.


## Ebony wood handle


Thun used oiled ebony wood for the ergonomic handle. This is a heavy, dark type of wood that is becoming increasingly rare. The handles were designed as such to function as an extension of your hand. The wedge on the bottom of the handle supports a professional grip, with the thumb and index finger on the blade.


## Top-quality Cronidur 30 steel


The blades of the Zwilling Twin kitchen knives are made from top-quality Cronidur 30 steel. This type of steel is mostly used in aerospace engineering and is characterized by an impressive toughness and corrosion-resistance. By combining these characteristics with Zwilling's Friodur ice hardening technique this blade is razor-sharp and sustainable.


The knives are forged with precision according to the Zwilling Sigmaforce method. This means that the blades are forged from one piece of steel with the help of a machine, leaving you with an exceptionally solid, balanced and flexible blade. With the help of laser technology the knives are enhanced with a razor-sharp edge, after which they are polished by hand by expert sharpeners.

Zunächst einmal war ich erneut verblüfft und überaus erfreut über die superschnelle Lieferung von einem auf den anderen Tag - und das einen Tag vor Heiligabend! Respekt! (auch für die Paketzusteller, die es heutzutage sicher nicht einfach haben in diesem Digitalen Zeitalter). Zum Produkt: Liegt super in der Hand, ist sehr scharf, und es macht Spaß damit zu arbeiten. Ich selber komme aus einem metallverarbeitenden Beruf und bin sozusagen metallogistisch ein wenig angehaucht also: Fetischist, was Messer und deren Verarbeitung angeht. Ansonsten hätte ich sicherlich auch zu einem etwas preiswerterem Messer gegriffen, die meistens auch ihre Arbeit ordentlich verrichten.   

Het Zwilling/Henckels Twin 1731 koksmes 20 cm.
Voor een koksmes van dit formaat is het een licht en goed uitgeballanceerd mes.
Het heeft een totale lengte van 32,4 cm en weegt daarbij 227 gram.
Het houten heft van 11,2 cm lang is gemaakt van afrikaans Makassar Ebben hout.
Het is prettig vorm gegeven en loopt naadloos over in het metaal.
Het mes ligt comfortabel in de hand en bied een goede grip, ook met natte handen.
Door het hout voelt het ook niet koud aan.
In de mesgreep methode valt dit mes op door de overgang van het heft naar het blad.
Dit gedeelte maakt dat dit mes net even anders is dan andere messen en voelt daarbij prettig aan.
Ook optisch is het mooi opvallend detail aan dit mes.
Door het ontbreken van een verdikte garde is er meer snijvlak van het mes te gebruiken en daardoor ook beter te slijpen.
Het mes is met 2.4 mm. gemeten over het midden van de rug opvallend dunner dan de meeste koksmessen.
Het Cronidur 30 is een zeer goed roestvaste staalsoort en vlekt ook niet waardoor het zeer onderhoudtsvriendelijk is.
Het staal is merkbaar een stuk harder dan bijvoorbeeld X50CrMoV15 staal waar de meeste keukenmessen van gemaakt worden.
Het mes wordt door Zwilling zelf niet scherp geleverd.
De baan van het snijvlak was daarbij ook niet onder een consistente hoek geslepen.
Echter moet ik toegeven dat messen doorgaans niet scherp worden geleverd door de fabrikant zelf, dus hierover persoonlijk geen verrassingen.
Voor het slijpen heb ik oplopend een serie Naniwa Chosera waterstenen gebruikt.
Hoewel langzaam laat het metaal zich goed scherp slijpen, het deed me denken aan koolstofstalen messen.
Ik heb daarbij een kleine slijphoek aangehouden van zo'n 10 graden.
Ik heb gemerkt dat het mes bij deze hoek lang zijn scherpte behoudt.
Ik gebruik een gepolijst aanzet staal voor en na gebruik om de baan van het mes te rechten, meer niet.
Een leuk detail is het logo van Zwilling op de rug bij het heft en de tekst op de linkerzijde van het blad.
Beide zijn laser geëtst i.p.v. gedrukt.
