This **Due Cigni Hakucho petty** is the Japanese version of the paring knife. Petty might mean inferior. This knife most certainly isn't. Because of its slim shape you can use this knife to peel vegetables and fruit or for the smaller cutting jobs in the kitchen. As such it is not that surprising that many professional chef's use this knife on a daily basis. Do make sure you don't pry or chop with this knife. As with every good Japanese knife the right cutting technique is key.


## Due Cigni Hakucho handle


The classic Japanese handle is made from olive wood. The soft, light-brown colour and the fragrance of olives radiate luxury. The flaming pattern adds an extra dimension to the handle. The handle was secured to the full-tang blade with three stunning rivets. To maintain the stunning colour of the olive wood, and to not affect the sharpness of the blade, we recommend cleaning this knife by hand. Dry it after cleaning it to prevent discolourations or tears and to make sure the wood doesn't bend. 


## Due Cigni Hakucho blade


The blade is made from Nitro-B 4119 stainless steel.  This is a type of steel with a high nitrogen content. It has an extremely thin microstructure and is highly resistant to corrosion. This type of steel is also easy to sharpen at home, should it lose some of its sharpness over time. The beautiful Kanji characters on the blade provide the finishing touch.

## Due Cigni Hakucho collection


The kitchen knives from the Due Cigni Hakucho collection were designed by Oreste Frati. The founder of FOX Knives. In addition to being the owner of Fox Knives, he is a gifted designer. He used the Japanese style as the basis for this collection of kitchen knives. The stunning markings on the blade emphasize this, and add to the design. The knives are produced in Italy. 


## About Due Cigni


Due Cigni (two swans) is a traditional, Italian knife manufacturer that has been producing top-quality kitchen knives, (pruning)scissors and saws for over hundred years. All products are produced in the Italian knife capital of Maniago. Some years ago the brand was bought by Fox Cutlery, also located in Maniago. They continued the Due Cigni tradition of producing fine, top-quality kitchen knives.

Ik zocht een goed mes om mijn goedkope messen te vervangen nu ik alleen leef en nietmeer moet kijken naar een partners wens.
Dit is voor mij echt een top mes. 
Het snijd moeiteloos door vlees en groenten. Kwam erg scherp uit de doos.
Het mes was overigens netjes verzorgd in een doos verstuurd.
Geen fouten in de slijpwijze of het heft. 

Ik ben erg tevreden! 
Ik kocht zowel het 12cm lemmet als het 18cm lange lemmet van ditzelfde merk/model.


dit petty mes gebuik ik naast de usuba voor het kleinere werk in de keuken. prachtig ontwerp dat zijn werk erg goed doet. Olijfhouten handgreep heeft bij mij een streepje voor en deze zijn erg mooi. Mijn vrouw is meer voor kleinere messen en vindt deze perfect. Tomaten, fruit en groenten snijden doet het mes voor haar hartstikke goed. Enige opmerking die ik heb is dat de linker handgreep een halve centimeter langer is in de richting van het lemmet dan de rechter. Praktisch gezien maakt dat niks uit

Prachtig mes dat doet wat je van hem verwacht. Sierraad voor de keuken!!

Prachtig mes met mooi olijfhouten heft. Sieraad voor in de keuken en genot om mee te werken! Aanrader!!!
