## About the Miyabi 5000MCD 67 collection

 The Miyabi 5000MCD 67 collection is the absolute top collection from the Miyabi by Zwilling range. These knives are characterized by the Cryodur blade with a core of MC66 steel. Around it 132 layers of steel were applied. This gives the knife its remarkable 'Flower Damask' look. Thanks to a special ice hardenings process at -196 degrees Celsius the knives have a hardness of up to 66 HRC. Even for Miyabi this is incredibly high.

 ## Honbazuke-style grind

 The blade is symmetrically sharpened in a traditional Honbazuke method. Here each knife is sharpened and stropped by hand in three stages. The extreme hardness of each knife ensures that the knife also stays sharp for a really long time.

 ## Oriental handle

 Not only the blade looks amazing, the handle was also produced with care. The D-shaped handle is made from special black ash wood. This wood makes every knife unique because of the stunning natural pattern. In addition, it looks perfect in combination with the glossy blade. The mosaic pin in the middle of the handle is the proverbial cherry on the cake. A subtle and stunning detail which emphasizes the sublime finish on the 5000MCD 67 collection.

Wat een prachtig mes. Wat een geweldige eigenschappen en wat een scherpte. Een echte allrounder. Handvat is prachtig en fijn vasthouden. 
Wel echt een mes met iets meer gewicht, maar dat vind ik fijn. De hardheid resulteert in een blijvende scherpte ook na intensief gebruik). De tekening van het mes zelf zijn waanzinnig en hey is een juweel, maar wel een om echt te gebruiken. 

Prachtig kokmes , super kwaliteit en zoals ik verwacht van een TOP product.
Ik ga zeker ook het vleesmes aankopen!!!

Couteau excellent et valant son prix,le tranchant de base est assez tranchant mais est plus impressionnant après un bon aiguisage à la pierre. Comme la lame est très solide elle sabime moins rapidement je fait personnellement un affûtage tout les 2 jours/3jours et un petit aiguisage tout les 2 semaines à un mois si morfils fort  apparant.
Ce couteau coupe tout les aliment de la même façon (plus ou moins) d un poivron à une carotte, ou une ailes de raie ( pas conseiller mais je l ai  essayer) ou du foie,... Tout se coupera avec casiment la même force la ou un couteau japonais moins au de gamme (style kay, ou même du zwilling myabi moins au de gamme +-150 à 250€) coupera des aliments plus simplement et plus difficilement d autre et demandera un aiguisage et affûtage plus régulier car acier moins bon et moins solide dépassant difficilement les 67 hrc pour les meilleurs.
Le gros défaut de ce couteau est son affûtage et son aiguisage qui sont +-2 fois plus long que un couteau japonais plus "bas de gamme "et demandera un nettoyage entre chague utilisation car la lame peu s oxydée.
En bref un très bon couteau japonais coupant TOUT sans difficulté mais où l entretient sera plus difficile et rigoureux.
