# About the Miyabi 5000MCD 67 collection


The Miyabi 5000MCD 67 collection is the absolute top collection from the Miyabi by Zwilling range. These knives are characterized by the Cryodur blade with a core of MC66 steel. Around it 132 layers of steel were applied. This gives the knife its remarkable 'Flower Damask' look. Thanks to a special ice hardenings process at-196 degrees Celsius the knives have a hardness of up to 66 HRC. Even for Miyabi this is incredibly high.

## Honbazuke-style grind

The blade is symmetrically sharpened in a traditional Honbazuke manner. Here each knife is sharpened and stropped by hand in three stages. The extreme hardness of each knife ensures that the knife also stays sharp for a really long time.


## Oriental handle


Not only the blade looks amazing, the handle was also produced with care. The D-shaped handle is made from special black ash wood. This wood makes every knife unique because of the stunning natural pattern. In addition, it looks perfect in combination with the glossy blade. The mosaic pin in the middle of the handle is the proverbial icing on the cake. A subtle and stunning detail which emphasizes the sublime finish on the 5000MCD 67 collection.

Wie bereits in einer anderen Bewertung, war auch die Klinge meines Messers verzogen. Nachdem ich es zurück gesendet habe, bekam ich erneut ein Messer mit verzogener Klinge.
Da die Klinge SEHR änlich der ersten ist, gehe ich davon aus, dass entweder ein Serienfehler vorliegt, oder (meiner Meinung nach) noch schlimmer: ich einfach das gleiche Messer erneut zugesendet bekommen habe!

Im Grunde handelt es sich um ein großartiges Messer, mit toller Optik und dem wohl besten verfügbaren Klingenstahl (wenn auch schwierig zu schärfen). Allerdings waren bei den ersten beiden Messern, die ich gekauft habe, die Klingen verbogen. Diese gingen beide zurück. Das dritte Messer war perfekt. Der Knives and Tools Support hat die Retouren allerdings zügig und professionell bearbeitet. Trotzdem ärgerlich, sowas sollte in dieser Preisklasse nicht pasieren

Ein absoluter Traum, optisch wie funktionell.
Habe mit dem TSPROF Blitz Complete Schleifsystem, die Schneide noch poliert und jetzt hat das Myabi eine respekteinflössende Schärfe (war vorher auch schon sehr scharf)

Remarkable sharpness out of the box for a production knife, at 12°ps according to the protractor. The 66rc alloy may be honed on hard ceramic-based stones (e.g. Shapton Glass HR), but resin-bonded diamond is dramatically faster. Expensive of course, but comparatively affordable for a 240mm ZDP blade. This one had a couple small scratches on a side, nothing of import, and the overall finish is very nice.
