This **Fissler Crispy Steelux Comfort frying pan, 26 cm** is great when preparing meat, fish or vegetables. Because the pans from this collection are made from top-quality 18/10 stainless steel, they can handle very high temperatures. As such you can quickly sear the product to keep it moist on the inside.

The edge of the pan was designed as such that pouring sauces and other liquids is easy. The transition between the base and the wall is also rounded, so that it is easy to reach while stirring. As such your food will never burn.

The Novo grill surface on the base replaces a non-stick coating. As such it works kind of like a grill. With it the product will be released from the base. As such you also don't need to that much oil, butter or fat. The CookStar base was designed as such that it can be used on all different cooking hobs, including induction. Changing between heat sources is also not a problem at all. Because of the top-quality base the conduction of the heat is very efficient. As such the heat is properly distributed and maintained.

## Tips for use

Put the pan on the fire and with your fingers, splash a few drops of water into the pan to see if it is hot. As soon as the drops dance inside the pan you know you have reached the right temperature.

Prepare high-protein products (meat and the like, but also potatoes) without oil, butter or other fat. The product will stick to the pan, but it will also release itself. This leaves you with a nice, crispy crust. It is very tempting to try to remove the product from the base, but please be patient. It will be allright!

Cleaning your pan thoroughly is essential. After use, the pan should be cleaned thoroughly with some washing-up liquid and a brush. If residue stays behind it will burn the next time you use the pan and only be more difficult to remove. Simply wiping a kitchen paper towel over the pan is not enough!

Also, don't use olive oil when preparing food. It's very tasty in a salad or stirred into pasta, but olive oil is not suitable for frying. When it reaches a temperature of 120 degrees or higher, harmful substances are released. Sunflower oil, coconut oil or simply butter are good alternatives.

## Pans with no PFAS, PFOA or PTFE

The abbreviation PFAS stands for per- and polyfluoroalkyl substances. These are man-made substances that do not naturally occur in the environment. Some examples of PFAS are GenX, PFOA (perfluorooctanoic acid) and PFOS (perfluorooctanesulfonic acids). PFAS is an umbrella term for all these substances, which are used in many products, including frying pans, grill pans and wok pans. PFAS have useful properties: among other things, they are repellent to water, grease and dirt. However, we now know that PFAS are harmful to health. 

Teflon is the commercial name for various plastic fluoropolymers, such as PTFE (polytetrafluoroethylene). PFAS is used to make these plastic fluoropolymers. Teflon provides the product with a water-repellent and dirt-repellent layer, and it is also heat-resistant. PTFE also allows two surfaces to slide over each other easily. That is why PTFE can be found in pans with a non-stick coating. In other words: they're all the same thing. **This pan is free from PFAS, PFOA and PTFE**.
