The Kai Shun Premier knives in the Tim Mälzer series combine KAI’s renowned and distinctive Damascus-layered metal construction with a hand-hammered surface design on the knife. This hand-hammered embellishment is known as Tshuchime in Japan and combines the exquisite aesthetic qualities of this knife with its exceptional sharpness.

The **Kai Shun Tim Mälzer bread knife 23 cm** was designed by top chef Tim Mälzer. With this knife you can easily cut through all types of bread. Hard crust, soft crust or soft buns: a piece of cake for this amazing knife. This knife isn't just limited to bread, though. This knife can also be used to cut cakes or hard vegetables and fruit. Think, for instance, of cutting the hard skin of pumpkins or melons. But also peeling or cutting a celeriac is no problem at all. As a result this knife can handle a lot more than just bread. All in all, a beautiful, functional knife to be loved.

The Kai Tim Mälzer knives are enhanced with KAI's famous damask layered metal structure, combined with a very strong core of VG10 steel. The core of the blade is on the outside enhanced with 32 layers of stainless damask steel. The hardness of these blades is 61 ±1 HRC, which is exceptionally hard. As such this knife retains its sharpness for a very long time. The handle is made from brown walnut wood and feels very comfortable in hand.

Het mes is scherp en houdt de scherpte langer dan mijn (ook prima) 20 jaar oude Zwilling Prof. S set.
Ik vind deze Shun messen zeer fraai afgewerkt.
De messen zijn lichter in gewicht dan mijn Zwilling set en liggen mij wat beter in de hand.
Deze messen zijn gekocht als een blikvanger en bruikbaar sieraad aan mijn keukenmuur. Daarom had ik het geld er voor over.

Top product dat goed bij mijn reeds aanwezige Tim Mälzer messen past. Een genot om vers brood ermee te snijden.
