The Miyabi 5000FCD gyutoh 34681-201 is a chef's knife with a blade length of 20 cm. The knife has been made in the Zwilling J.A. Henckels factory in Seki, Japan.

 ## About the Miyabi 5000FCD-series

 The Miyabi 5000FCD series combines a magnificent design with the use of high-quality materials. The knives have a FC61 core, surrounded by 48 layers of damask steel. Thanks to a special Friodur ice-hardening process, the blades are extremely robust with a hardness of 61 HRC.

 **Honbazuke-style grind** The blade is symmetrically sharpened in a traditional Honbazuke manner. Here each knife is sharpened and stropped by hand in three stages. The sharpness obtained from this is retained for a long time by the hardness of each knife.

 **Handle** The D-shaped handle is just like the blade it really something. The black pakka wood gives the handle an exclusive look. All thanks to the decorative red ring finish and the beautiful mosaic pin.

 **Zwilling Japan** The Miyabi collection is produced by Zwilling Japan and is the ultimate combination of German decency and traditional Japanese craftsmanship.

Its a premium felling knife and joy to use it as my main knife in the kitchen. The shape of the knife allows you to get a good grip and control it perfectly. The steel is not very hard and carrots is the limit in my opinion. It definitely gets slightly dull after a pineapple. In my knife the blade has a slight bend but it is really hard to notice.

Couteau d’excellente qualité, bel équilibre, conforme aux attentes.

Pour le coup le tranchant tranche. Je l'utilise assez rarement car j'ai un peu peut de l'abîmer. 
L'épaisseur de la lame est plus fine que je que j'imaginais, ça doit être du au fait que l'acier utilisé n'est pas commun en Europe.
Le manche est rond, j'ai pas trop l'habitude, c'est assez spécial en main mais à force on s'habitue.
C'est un couteau que j'ai plus envie d'exposer dans mon salon que d'utiliser, cependant je vais veiller à plus l'utiliser dans les prochains mois car il m'a coûté une couille !
