How to keep it in top condition

Whichever version you choose: these knives are not dishwasher-safe. The combination of heat and harsh detergents is harsh on both steel and wood. Just rinse by hand, dry immediately and occasionally oil the handle – that’s all it takes. Especially with carbon steel, make sure to clean and dry the blade straight after use.
