Excellent knife. Overall, it is technically very well made, with very carefully finished details. It is fairly light and properly balanced. After many uses, I would say the edge retention is excellent. Be careful not to use it on hard foods. For example, if you are cutting meat around bones, it is best to be extremely careful, as chipping the blade is quite easy. The blade is made from Aogami #2, or Blue Paper steel, so rust is always a risk. Immediately after use, I strongly recommend washing it, drying it thoroughly, oiling it and putting it away. Sharpening needs to be done very carefully. As with many Japanese knives, the bevel is quite thin and has a different angle from typical European or American knives. When it arrives at your home, it already has the correct sharpening angle. Ideally, you should always maintain the same angle it was delivered with. As for the grit of the water stone: if you use Japanese stones (grit measured according to JIS, often shortened to J), I recommend finishing, after the final sharpening, on a 6000-grit stone. If you use European water stones (grit measured according to FEPA, often shortened to F), I recommend finishing, after the final sharpening, on a 4000-grit stone. In any case, whether you use a Japanese or a European stone, I strongly recommend completing the sharpening on a good genuine leather strop, with a surface that is not too worn. To conclude the review, I recommend buying this knife only if you are aware that this type of knife requires a little more maintenance and care in use than typical European knives.

This is my first decent Japanese knife and I love it. I love how the finish gains patina and character over time. Like previous purchases, the speed, value and service is top notch.

Beautiful knife. Light, thin, well balanced and very sharp. So impressed thinking about buying the nakiri, even though don't really need another knife.
