The Eden **Kanso Aogami-kiritsuke** with an 18 cm blade is a stunning, Japanese kitchen knife. It is traditionally made by hand. The knife was originally designed as a versatile knife, perfect when preparing Asian dishes. They did so by combining the blade of a nakiri (vegetable knife) and sujihiki (fish knife). Because the two blade types were combined you can use this knife to cut both fish and vegetables. With its 18 cm blade the kiritsuke is perfect for daily use in the kitchen. ## Kiritsuke from the Kanso Aogami collection

Originally, the kiritsuke is a one-sided grind knife that emerged from a combination of the usuba (vegetable knife) and yanagiba (fish knife). Because these knives each had a different function, and because the blade was enhanced with a one-sided grind, this knife is anything but easy to use. That is why, in many traditional restaurants, this knife is only used by the head chef. It symbolizes expertise and status.

The kiritsuke from the Eden Kanso Aogami collection is different. To make the knife a little more user-friendly, it is enhanced with a double-sided grind. As such it has become a combination between a nakiri (a usuba with a double-sided grind) and a sujihiki (yanagiba with a double-sided grind).

The flat heel of the blade has the same shape as the nakiri. The chef's knife is great when chopping and cutting meat, fish and vegetables. The blade, however, is narrower and a little longer than the traditional nakiri. The blade also transitions into a reversed tanto tip. These are characteristics of the sujihiki: a Japanese kitchen knife to cut raw fish. As such the kiritsuke is, in addition to vegetables, also great when cutting fish. The tip is perfect for small, precise cutting tasks.

## Blue Paper Steel quality

The blade of the kiritsuke and the other knives from the Kanso Aogami collection is made from aogami steel. Aogami is Japanese for blue paper. The type of steel is therefore also called Blue Paper Steel. It owes its name to the packaging in which the manufacturer delivers the steel. Blue Paper Steel is very hard (62-63 HRC), as such the knife can be sharpened razor-sharp. Aogami can handle corrosion and chipping better than White Paper Steel, but is is not corrosion resistant. It is therefore a knife for the real expert: it requires a lot of attention and maintenance. The handle of the Kanso Aogami knives is made from red sandal wood. This is a stunning type of wood that makes the knives look very luxurious. Because this is a natural product, the handle of each knife will be different. The handle of your new kiritsuke can therefore also be different from the one in the photograph. The asymmetrical D-handle is a traditional Japanese type of handle. It feels great in hand. Originally these knives are therefore also either left or right-handed. We, however, experienced that the same D-handle feels comfortable in hand regardless of whether you are left or right-handed. 

## Sharpening Eden Kanso Aogami kitchen knives

Do not sharpen these knives with a pull-through sharpener. Because of the hardness of the steel and the sideways movements that are made with a pull-through sharpener pieces of the edge can break off. That is why we recommend sharpening these knives by hand on a sharpening stone, sharpening steel or with a sharpening system.

This is my first decent Japanese knife and I love it. I love how the finish gains patina and character over time.

Das Eden Kanso Aogami bildet mit Abstand zu anderen Messern eine besonders dünne Schneide aus, so dass harte Gemüse- Sorten mit dieser Klinge mühelos geschnitten werden können !

Ich habe auch KAI Shun Classic Messer, die sind gut, aber an der Schneide noch etwas dicker.
