This **Eden Susumi SG2 chef's knife** is a nice Japanese knife that was forged by hand. The knife is enhanced with a 20 cm blade. As such it is suited for the more heavy-duty tasks. The chef's knife is a real all-rounder. You use it to cut vegetables, meat and fish. It's also ideal when chopping herbs, crushing peppercorns and peeling garlic cloves.

## Nice SG2 steel blade

The blade of this knife is made from SG2 powder steel, hence the name. This is a type of steel with a very fine structure and a hardness of 62-63 HRC. Because of the hardness of these knives you can sharpen them very thinly. The knives are corrosion resistant and the damascus steel has the same hardness as the SG2 core. The knives are more scratch-resistant than most knives made from damascus.

## Traditional red sandalwood handle

The handles are made from red sandalwood, a type of rosewood. Perfect for a Japanese knife such as this. The handle has a traditional Japanese D-shape. As such the knife feels comfortable in hand. Because of the asymmetric design, however, this knife is suited for right-handed use.

## Sharpening Eden Susumi kitchen knives

Do not sharpen these knives with a pull-through sharpener. Because of the hardness of the steel and the sideways movements that are made with a pull-through sharpener pieces of the edge can break off. That is why we recommend sharpening these knives by hand on a sharpening stone, sharpening steel or with a sharpening system.

Gutes Messer, vorausgesetzt dass man immer am Rand vom Schneidebrett bleibt. Tut man dies nicht haut man beim Schneiden durch die Geometrie des Messer andauernd mit den Knöcheln aufs Schneidebrett.

GEweldig mes! Ben echt heel blij mee. Een aaanrader voor de (ervaren)  kookliefhebber.

Het mes ziet er uit als verwacht, het is vlijmscherp en snijdt fantastisch.
Enige grote minpunt is de kwetsbaarheid, het is zeer dun geslepen, uiteraard een eigenschap van een mes als dit, maar aan de punt is dit heel extreem, de laatste 2mm hiervan zijn zo dun als aluminiumfolie.
Bij de eerste keer snijden tikte ik zacht de snijplank aan en stond dat puntje krom. Met minimale druk liet het zich ook weer terugduwen.
Van een mes met een dergelijke hardheid had ik dit niet verwacht, dat het zou kunnen breken, oké, maar buigen??

Dit mes is nu een aantal weken in bezit, hoewel ik vind dat een product/ object nooit volmaakt is, komt dit mes er zeer dicht bij in de buurt.


Het loeischerpe lemmet heeft een prachtige afwerking (het damastaal patroon). Het contrast tussen de verschillende lagen komt goed naar voren.

Ook het handvat ziet er simpel, maar elegant uit.

Het mes is erg licht, in gewicht en tijdens het gebruik. 

Voor mijn manier van snijden (de japanse manier) is dit mes perfect. Wel zou het snijvlak iets rechter mogen van mij.

Ook ben ik erg tevreden met de service van KATO groep. Tijdens mijn aanschaf bevatte het product een fout, er zat geen logo op het mes. Na 2 mailtjes heb ik mijn product retour gezonden, en kreeg ik hem na welgeteld 3 dagen, van mijn eerste mail tot het ontvangen van het nieuwe mes.

In conclusie geef ik 4 sterren voor de algemene indruk, dit omdat ik vind dat het mes iets rechter mag (ik gebruik eigenlijk alleen het rechte gedeelte tijdens het snijden) Maar dit kan ook komen door mijn manier van snijden.

De afwerking en prijs-kwaliteit verhouding vind ik een dikke 5 sterren waard. Dit mes voldeed, en voldoet nog steeds volledig aan mijn wensen, ik kan dit mes zeker aanraden voor elk persoon die niet volgens de europese manier snijd (op en neer beweging van het mes, waarbij een gebogen lemmet nodig is.)





Das Messer entspricht voll meinen Erwartungen. Es ist im Lieferzustand schon sehr scharf, ich hielt es vorerst nicht für nötig, selbst nachzuschleifen. Ich besaß bisher noch kein so teures Kochmesser, mir ist allerdings die Schärfe von so hartem Stahl von anderen Messern bekannt. Das suchte ich eben auch zum Schneiden meines Garguts, allerdings ohne Eisengeschmack oder starker Rostgefahr.

Mit diesem Messer kann ich problemlos auch saure Früchte wie Orangen schneiden, ohne dass der Stahl damit reagiert (Wenn man ihn danach unter fließendes Wasser hält). Nach dem Reinigen trockne ich es einfach ab und hatte bisher keine Probleme mit irgendwelchen Belägen/ Rost, super! 

Es hat das richtige Gewicht und liegt top in der Hand, auch feine Arbeiten erledige ich nun mit diesem Messer. 

Ich habe es jetzt einmal nachgeschärft um zu gucken wie einfach das geht, dies sollte mit ein wenig Übung und den richtigen Steinen kein Problem darstellen.

Ich kann das Messer uneingeschränkt empfehlen, für den, der Wert auf einen schönen, sauberen Schnitt und einfache Handhabung beim Kochen legt.
