Super scherp ligt fijn in de hand.
Door de vorm van het mes kan je heel dun groenten snijden bijv pompoen zonder moeite.

Bij de vergelijking tussen Japanse- en Duitse messen wordt aangegeven dat de Japanse dunner en harder zijn. Dat kan in het algemeen wel kloppen, maar niet voor dit mes. Dun, hard en vlijmscherp. En dat blijft hij ook, want zelfslijpend carbonstaal. Nadelen? Niet voor mij. Ik gooi toch al nooit een mes in de vaatwasser en ik onderhoud mijn spullen goed. Het lemmet krijgt een prachtig patina en het hout wrijf je met enige regelmaat in met een heel klein beetje olie. Er bestaat voor mij niets beters dan messen van Herder.

Zeer scherp en fijn lichtgewicht keukenmes! Hou 'm zelf bij met een strop na het afwassen met de hand.

Wat een mes. Ben eigenlijk steeds die goedkope messen gewend.
Dit snijd als een mes in de boter. Voor mij geen goedkope messen meer.

Mal abgesehen von den Verfärbungen die zu erwarten waren, war dieses Messer beileibe nicht so scharf wie erwartet. Das kann ein halb so teueres genauso gut oder schlecht, eventuell habe ich ein abweichendes Produkt. Von diesem Messer bin ich wenig begeistert der Spalt zwischen Klinge und Griff ist zu gross es setzen sich Speisenreste ab. Mei nächstes kaufe ich im Laden um das Produkt schon mal in der Hand zu haben. Der Griff selber liegt gut in der Hand.
