Couteau à la lame très dure (60HRC), s'affûte facilement néanmoins parce que la lame est très fine. J'ai pris le modèle pour "ménagère", donc la lame est encore plus fine. IL y a donc un effet "laser" indéniable. L'acier ne rouille vraiment pas facilement, il y aurait plutôt un léger effet patine. J'ai trouvé le morfil difficile à enlever.

Ik had al meerdere messen van Robert Herder, maar dan de wat luxere uitvoeringen. Voor dagelijks gebruik heb ik dit Santokumes erbij gekocht waar ik zeker geen spijt van heb.
Voor het eerste gebruik heb ik het lemmet ontvet en 24 uur in een smalle maatbeker met azijn gezet. 
Dit geeft een mooie egale patina look die niet meer verdwijnt. Doe je dit niet dan wordt het lemmet op den duur wat vlekkerig, al doet dit niet af aan de kwaliteit.

Kan zich qua scherpte gerust matchen aan een duurder Japanse Santoku !  Goede handligging, licht in gewicht, mooie balans.
Basic afwerking maar dat is net de charme van dit mes.
Absoluut aan te bevelen.

Super scherp ligt fijn in de hand.
Door de vorm van het mes kan je heel dun groenten snijden bijv pompoen zonder moeite.
