Güde Alpha Olive type of steel

The blades of Güde Alpha Olive kitchen knives are made of ice-hardened chromium-vanadium-molybdenum steel with a hardness of about 57-58 HRC. Choosing the right steel for knives is a complex task. The steel must be hard enough to provide durability, but not too hard or it will break during use. At the same time, it should not be too soft either, otherwise the knife will lose its sharpness very quickly. After the blades have been forged and sharpened, they will go through a process called ice hardening. The knives are cooled down to -80 °C to improve the microstructure in the steel. This creates a corrosion-resistant and hard blade that will not easily break!

The handles are made from carefully selected olive wood from up to 500 years of age. Olive wood is very resistant to moisture. The grain has a graceful and distinct variation between light and dark brown. The scales are attached to the steel with rivets, giving the knives a traditional look.
