Carbon-steel blades

The blades of the 1922-knives are made of carbon steel. This steel can often be sharpened to a higher level of sharpness than stainless steel, and it will retain that sharpness for a longer time too. However, carbon steel is not stainless and these knives require a little TLC because of this. Wash them by hand immediately after use and dry them off well. Never leave the knife wet or dirty because it will rust. Over time patina will form on the blade and the steel will be a little more stainless. You'll have to be extra careful when cutting acidic products too.
