The Tojiro Atelier knives are handmade Japanese kitchen knives. This collection of knives has everything you need in the kitchen. Tojiro Atelier blade
The Tojiro Atelier kitchen knives feature blades consisting of 63 layers of hand-forged damascus steel. The core is made of VG10 steel, with 31 layers of damascus steel on either side. This ensures a strong and flexible blade that looks beautiful without compromising on cutting performance. Because these knives have more layers of damascus steel than most, the knives from the Atelier collection have an extra intricate pattern. Tojiro Atelier knives are forged by hand and finished with the brut de forge technique to emphasize the unique nature of the forging process and giving it a dark colour. The blades are hardened to 62 HRC, resulting in razor-sharp blades that retain their sharpness for a very long time.
Tojiro Atelier handle
The handle and the bolster are made from wenge wood, separated by a white spacer. The handle has a traditionally Japanese octagonal shape. That makes this a symmetric knife, suitable for right-handed use and left-handed use. This handle shape offers excellent grip, perfect when you're cutting fish, for example. The octagonal shape is harder to produce than round shapes, so you'll often see this on higher quality knives.
