Features of the Miyabi 5000MCD series

The blades of these knives are made from ice-hardened Microcarbide Cryodur steel with a hardness of 63HRC. This core is flanked by 100 layers of damascus steel, forged together to form a stunning pattern. The blades are sharpened according to the Honbazuke method. That means the blade has been sharpened to razor-sharpness by Miyabi's craftsmen. A time-consuming job that requires incredible skills. The very high hardness makes sure the knife will retain this sharpness for a long time. Moreover, the edge is very thin, so you experience very little cutting resistance while cutting. The MC in MCD stands for Microcarbide steel, the D for damascus.

Miyabi 5000MCD handle

The D-shaped handle is made from Masur birch wood. This wood has a beautiful natural pattern, which makes every knife unique. The light wood looks amazing in combination with the polished blade. There is a magnificent mosaic pin in the middle of the handle - another stunning detail that highlights this collection's superior finish and attention to detail.
