Features of the Miyabi 4000FC series

Miyabi KOYA 4000FCV2: Honbazuke hand-ground blade

The blade is made of FC61 stainless steel, a type of steel known for its fine structure and reliable sharpness retention. The blade is hardened to 61 HRC using the FRIODURx2 method, in which the steel is ice-hardened twice, making it harder, more wear-resistant and better able to withstand intensive use. The blade is then sharpened by hand using the Honbazuke method, which results in a razor-sharp edge that you will notice when the knife glides through a tomato as if it were nothing. The spine and heel of the blade are nicely rounded. This may not sound particularly fancy, but in the kitchen, you immediately notice how pleasant it is to use when cutting for extended periods.

The handle is made of sturdy pakka wood and feels comfortable to hold. The octagonal shape fits surprisingly naturally in your hand, without you having to get used to it or spend ages searching for the right grip.
