Japanese whetstones: traditionally speaking the sharpest choice

Knife sharpening has been an important part of craftsmanship and culinary culture in Japan for centuries. Japanese knives are made with great precision, and the same level of care is applied to their maintenance. That is why Japanese sharpeners developed whetstones that are renowned for their consistency, sharpness and efficiency. Thanks to the combination of fine abrasive grains and a carefully selected binding agent, Japanese whetstones deliver a highly controlled and refined sharpening action. It is not without reason that these stones are regarded worldwide as the standard for those who want to get the best sharpness and durability from their knives.

Japanese water stones

The Japanese water stone is the favourite among enthusiasts and master sharpeners who want to keep their knives razor sharp. Although other methods may be quicker and easier, nothing matches the sharpness achieved with a water stone. A whetstone consists of abrasive grains and a binding agent; during use, grains break off, creating a new, sharp layer each time. After frequent use, the stone may become worn, which can be easily corrected with lapping stones or powder.

Grain size

Whetstones vary in coarseness: a lower grain size (e.g. 400) is used to reshape a blunt knife, while higher grain sizes are suitable for fine finishing. It is important to always use sufficient water; some stones need to be completely submerged, others are ‘splash & go’ and only need to be moistened. During sharpening, a layer of water ensures that sharpening residues (slurry) are removed and the sharpening process runs smoothly. Japanese water stones can be used to thin or sharpen a blade. Thinning is necessary for extremely blunt knives that can no longer even cut through paper, while sharpening is intended to optimise the sharpness of a blade that is still reasonably functional. With the right technique, Japanese water stones deliver unrivalled sharpness and long-lasting cutting pleasure.

How do you sharpen with whetstones?

Japanese whetstone set

A Japanese whetstone set is essential for anyone who wants to maintain their knives to perfection. Thanks to the combination of different grain sizes, you can bring each knife to optimum sharpness step by step. Typically, you start with a coarse stone to repair damage or to form a new cut. Next, use finer stones to further refine the blade and ultimately create a mirror-smooth, durable finish. Japanese whetstones are renowned for their speed and efficiency; they sharpen noticeably faster than many Western varieties and deliver an exceptionally sharp, consistent cut. Many sets also come with a sharpening stone holder or lapping stone, making your work more comfortable and allowing you to easily keep your stones flat. This makes a Japanese whetstone set a complete and high-quality basis for accurate and long-lasting knife maintenance.

Grain size

With a set, you can combine multiple grain sizes, allowing you to sharpen each blade step by step to razor sharpness. Start with a coarse stone to repair damage or form a new cut, and finish with finer stones for a mirror-smooth finish. Japanese whetstones are known worldwide for their high quality and excellent sharpening properties. They sharpen faster than Western stones and provide a refined, durable cut. Some sets also include a whetstone holder or lapping stone, allowing you to work comfortably and effectively.
